Cafe atmosphere is often treated as a creative choice: choose a playlist, set the volume, and hope customers enjoy the room. The research is more useful than that, but it is also more limited. Participants tasted the coffee in silence and while listening to two musical fragments designed to carry either a sweet or bitter connotation. The method records which sensation dominates attention over time. It is not a direct measurement of taste intensity.

The music changed the sensory description of the same coffee. Bitter-connotation music increased the duration of bitter dominance, while sweet-connotation music reduced it. The sweet attribute was barely selected when the coffee was tasted without music, but its selection and duration increased with the sweet musical fragment. This is evidence that sound can shape the interpretation of a drink, not evidence that a particular playlist will increase cafe sales.

The same research used a separate group of 72 consumers to evaluate emotions while drinking the coffee under the same musical conditions. Its reported behavioral outcomes included more time and more spending when the music and environment were congruent.

That limitation gives cafe owners a practical measurement plan. If you change the music, record the condition, time period, volume, occupancy, average ticket, transaction count, dwell time, customer satisfaction, and repeat-visit signal. Compare like-for-like dayparts and use a control period where possible. The question is not whether music works in the abstract. It is which sound conditions improve the outcome that matters for this cafe without damaging conversation or staff comfort.
