Research in dining spaces shows that occupancy changes sound level and communication quality. Speech research also shows that intelligibility depends on the masker, distance, reverberation, and listener. These findings support testing the whole room, but they do not produce one guaranteed volume for every restaurant.

If people raise their voices, lower the music first. If the room remains loud, investigate dishes, kitchen extraction, refrigeration, bar equipment, hard surfaces, and groups. Music is not the only noise source.

Measure occupied conditions

Use a calibrated sound level meter for a formal assessment. A phone app may help compare tables or shifts, but it is not automatically accurate enough for legal or occupational decisions.

Test at a quiet table, a table close to the speaker, the host stand, a central table during realistic occupancy, and the service path. Record level, occupancy, kitchen and bar activity, HVAC, complaints, and whether announcements were clear. Test an empty room, normal service, and the busiest realistic period.

NIOSH recommends 85 dBA averaged over an eight-hour workday as an occupational exposure reference. This is not a target for restaurant music. If staff must raise their voice at arm's length, assess total exposure under the rules that apply locally.

Fix coverage before increasing volume

One loud speaker can make a nearby table uncomfortable while leaving a distant corner too quiet. Several evenly distributed speakers at lower output are usually easier to control. Avoid placing a speaker directly above a table or workstation.

If the room has too much echo, more music can make conversation worse. Review curtains, upholstered seating, absorbent finishes, and noisy equipment while respecting fire, hygiene, cleaning, and accessibility requirements.

Different restaurant zones need different tests

The dining room is usually judged by conversation, but the bar, entrance, terrace, and service path can behave differently. A hard bar counter may reflect sound toward nearby seats. A terrace can lose music quickly outdoors, tempting staff to increase it beyond a comfortable indoor level. A host stand may need speech to remain clear even when the dining room is busy.

Set a maximum for each zone and record where the control is located. If one control changes several rooms, use the quietest area as the limiting test. Never solve a dead corner by making the nearest table uncomfortably loud. Reposition speakers or add even coverage instead.

A practical opening routine

Before service, check that music starts at the approved level, the correct zone is selected, and the first few transitions are smooth. During the busiest period, walk the room and listen from several tables. Ask one staff member whether names, orders, warnings, and alarms remain clear. At closing, note complaints and any level changes so the next shift does not repeat the experiment.

Service periods and troubleshooting

Set starting levels for breakfast, lunch, dinner, and late bar service. A late-service level should not remain during a quiet opening. When guests complain, lower music first and then inspect reverberation and other sources. When staff report fatigue, examine the whole shift, not only the playlist.

Approve a level only when conversation, instructions, and alarms remain clear, multiple positions have been tested, coverage is even, staff exposure is considered, and each service period has a maximum.
